Oh yes, it will. Coconut milk marries yogurt in the most romantic way resulting in a silky smooth texture, and the lime adds heaps of flavour and freshness.
Although you’ll want gulp it down before you can breathe, this heavenly smelling tropical lassi will force you to stop savour its tang and coconutty fragrance.
Coconut Lime Lassi
2-3 servings
Ingredients
- 1 and 1/4 cups coconut milk
- 1 cup yogurt (or 1 heaped cup curds)
- 1/4 cup lime juice or the juice of 3 limes
- 5 tablespoons sugar (or honey)
- 10 ice cubes
Instructions
Put all the ingredients into a blender and blend till smooth. Serve immediately.
